I was recently asked to propose some strategies for settling conflicts around mealtime in the house. What do you do when you have part of your family that wants to eat healthy and part of your family that wants to eat junk food? I know it sounds simple but how about healthy comfort food. I have gotten pretty good at this because it is my family too. Zoe loves things that are simple, junky and comfort foods. I, the one who cooks, is trying to eat healthier. Instead of cooking two meals for two people, I have come up with some healthy versions of comfort foods.
This video shows three recipes that make comfort food healthier which includes burgers, mashed potatoes and mac and cheese. Here are a few other ways you can make comfort foods healthier.
One way is to add one scoop of Enrichables Super Veggies to anything. I add it to my spaghetti sauce, and any other dish I make including the three recipes in the video above. I also add a scoop of Enrichables Pea Protein to help ensure we get enough protein in our diets, which is especially important now that we are on a vegan plant based diet. I add it to just about anything I make. Adding these is super easy as it does not change the color, taste or texture of the recipe. But here are a few recipes you can use to make your comfort foods healthier.
Cacio e Pepe With Zucchini & Peas
If I am making a pesto sauce or some other sauce with a lot of green I will add some of our Enrichables Kale & Fiber. While this one does not change the taste or texture, it does add a green hue to the dish. So this pasta dish with a green sauce is yummy
I also sneak it into these Green Monster Muffins and into my Peanut Butter to make Hulk Butter. If I am baking for a family with kids, I take my Green Monster Muffins (or sometimes cake mix with some Kale and Fiber) and add a layer of peanut butter and jelly (I make both in my Deluxe Cooking Blender) and then I have Green Hulk Butter and Jelly Cakes or Muffins.
